1 onion
2 g thyme
2 gr bay leaf
1 g cardamom
1 g coriander seeds
2 gr pepper
4 gr parsley

100 gr mix of fresh herbs (coriander, dill, tarragon, mint, French parsley)
CARPACCIO
1 Red Delicious apple
Olive oil
Salt & Pepper
½ lemon juice
MAYONNAISE
100 g grapeseed oil
1 egg yolk
10 lemon juice
8 fine salt
100gr mix of fresh herbs (coriander, dill, tarragon, mint, French parsley)

Red Delicious apple carpaccio with pickled herring and herb mayonnaise
Preparation
Clean, prepare and salt the herring.
Arrange them in a dish with the finely sliced onions.
Heat the wine and vinegar with the herbs and pour over the fish. When the liquid is
cold, remove the fish and onions.
Cut the fish into small cubes and mix with freshly cut herbs and pickled onions.
Carpaccio
Finely chop the apples and season with olive oil, salt, pepper, and lemon.
Mayonnaise
Make a classic mayonnaise and add the chopped herbs.
