SALAD
4 Chicory heads
3 Golden delicious apples
1 mix of young lettuce leaves
VINAIGRETTE
100 gr hazelnut oil
100 gr verjuice
10 g lemon juice
20 gr Sirop de Liège (Typical jam from Belgium made of apple and pear)
10 g Chives
5 gr Salt
5 gr Pepper
1 Golden Delicious Apple
FOAM
200 gr Bacon
400 gr Cream
100 g white wine
1 shallot
2 gr Pepper
BREAD
¼ sourdough bread
250gr butter

Warm salad with Golden Delicious apples, chicory, verjuice vinaigrette, farmhouse bacon foam, and a side of crispy sourdough bread.
Preparation
Clean the salad and chicory heads and cut the apple into sticks.
Vinaigrette
Cut the apples into small cubes and combine all the ingredients.
Foam
Fry the bacon, when it starts to color add the shallots and pepper.
Deglaze with white wine and reduce by ½ then add the cream and cook over low heat for 10 minutes.
Strain and put in a whipping siphon with 1 gas cartridge. Serve it hot.
Bread
Cut the bread into slices and in a pan brown them in butter. Season with salt.
