APPLE ROLL WITH SMOKED SALMON

  • 150 gr smoked salmon
  • 250 gr apples, sliced in thin rings (mandoline or knife)


SALTED CARAMEL

  • 120 ml heavy cream
  • 90 gr butter
  • 200 gr white sugar
  • 2 tbsp. water
  • 1 tsp. flake salt


ARTICHOKE HUMMUS

  • 230 gr cooked chickpeas
  • 8 canned artichoke hearts
  • 200 ml water
  • 1 clove garlic
  • 1.5 tbsp. of tahini
  • 1 tbsp. extra virgin olive oil
  • The juice of half a lemon
  • Salt

Moroccan chef Najat Kaanache shows us how sophisticated cuisine goes far beyond the borders of countries with a classic gastronomic tradition, such as France. Influences from both Spanish cuisine and her homeland can be found in her menu based around Marlene® apples.

Preparation
Apple roll with smoked salmon
Set the ingredients aside.

Salted caramel
Place a saucepan with sugar and water on the fire and cook over low heat until a golden caramel is obtained.
Then, remove the saucepan from the heat and
carefully add the cream, butter, and salt flakes,
stirring quickly until they are mixed with the caramel and a sauce is obtained.

Artichoke hummus
Pour the chickpeas, artichokes, tahini, lemon juice, garlic, oil and salt into the blender. Add half a glass of water, keeping the rest aside.
Start the blender until the mixture is fairly coarse.
Gradually add the remaining water while continuing to blend until a more or less fine consistency is obtained.
Place the mixture in a pastry bag.

Mounting the roll
Brush the apple slices with the salted caramel.
Place 5 apple slices in a transparent film.
Then, place the smoked salmon on top of the slices.
Spread the hummus on top and close the roll.
