Marinated raw apple with fresh goat cheese and chopped walnuts
• 2 tbsp honey • 1 lemon, juice • 1 small piece of ginger, finely chopped • 1 sprig of thyme • 1 Royal Gala
For the presentation
• 50 g walnuts • 50 g sugar • 100 g fresh goat cheese, medium-aged • honey
Mix the honey, lemon juice and ginger until it has become a marinade.
Wash the apple, cut into slices 1 cm thick and leave it in the marinade overnight
Caramelise the nuts in the sugar, allow to cool, chop finely and sprinkle over the marinated apple slices.
Sprinkle with crumbled fresh goat cheese and garnish with honey.
