Apple pizza with blue cheese
Ingredients (serves 4)
• 4 Golden Delicious • 50 g honey • 100 g apple juice • 50 g Royal Gala apples • 50 g Granny Smith • 50 g Fuji • 50 g Golden Delicious.
For the presentation
• 240 g blue cheese (Gorgonzola) • diced mint, cut into strips.
Peel the four Golden Delicious apples, remove the cores and cut into wedges. Place in a saucepan with the honey and apple juice and cook for about 10 minutes until tender. Purée with a hand blender.
Core the other apples and dice medium, leaving the peel on.
Arrange the apple purée on the plate and top with diced apple and blue cheese.
Garnish with mint and serve.
